Recipe - Banana Coconut Muffins

I whipped up this lovely little batch of muffins the other day and they turned out beautifully. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients

Group 1

1 3/4 cups almond meal

1/4 cup coconut flour

pinch Celtic sea salt

1/2 tsp cinnamon powder

1/4 tsp baking powder (aluminium free)

1/4 cup desiccated coconut

 

Mix Group 1 ingredients together in a large bowl.

 

Group 2

1 large ripe banana

2 600g eggs

1 tsp vanilla

1 tbs coconut nectar (optional)

2/3 cup coconut milk

2 tbs coconut oil

 

Blend Group 2 ingredients in blender or food processor until smooth.

 

Fold the liquid ingredients into the dry ingredients and be careful not to over mix as the almond meal can become oily.

 

Fill patty pan cases with mixture. (It makes approx. 16 patty cake sized muffins).

 

Bake at 160 degrees (fan forced oven) for 15-20 minutes or until golden brown and a skewer comes out clean.

 

Cool on a rack then enjoy!
