Protein Ball Recipe

I wanted a healthy snack...you know....just in case! So I got my creativity happening and came up with some yummy little protein balls....and guess what? Not a date in sight! It's not that I have anything against dates, I actually quite like them but I am really over pretty much most of the snack balls on the market because most of them are based on dates.


Anyhow, I came up with the following recipe which has heaps of room for tweaking to your own likes and taste. Have fun with it!


Ingredients:

1/2 cup almond butter

1/2 cup almond meal

1/4 cup cacao powder

1 dessertspoon mesquite powder

1 dessertspoon vanilla protein powder (pea protein or whey protein)

1/2 teaspoon Celtic sea salt

1/4 cup coconut + another 1/4 cup for rolling the balls

1/4 cup sultanas

1 dessertspoon melted coconut oil

1 dessertspoon maple syrup (or to taste)

Few drops vanilla stevia (optional)


Method:

  1. Mix all the dry ingredients together in a bowl.

  2. Add the almond butter and mix together with the dry ingredients with your hands. (It's easier than using a spoon...trust me!!)

  3. Add the sweetener/s and mix until combined thoroughly.

  4. Take a heaped teaspoonful of the mixture and shape into a ball, then roll in the extra coconut.

  5. Refrigerate and enjoy.
