Recipe - Low Carb Pancakes

These delicious little pancakes are perfect for breakfast or morning tea. They are high in protein, contain no sugar and are quick and easy to make, with only 3 ingredients. You really can't ask for more!

The only difference with my version of the original recipe is that I used organic quark instead of cottage cheese.

Ingredients:
4 eggs
250g cottage cheese
1 tablespoon psyllium husk
What to Do:
Place all the ingredients in a bowl and mix until the consistency of a smooth batter. Let it sit for approximately 5 minutes until it expands.
Heat some butter or coconut oil in a frying pan on medium heat. Place heaped tablespoons of the mixture into the pan, and allow to cook for a few minutes on each side. Carefully flip the pancakes, and ensure that the cottage cheese doesn't stick to the pan.
Serve with fresh, or thawed organic berries. For an extra touch of decadence, top with organic whipped cream.
